		<description>My suggestion is three fold:

One freeze anything that freezes well - bok choi, snap peas? Definitely spinach and carrots. Or make soup and freeze that for later lazy days. A really good one is with chorizo, chickpeas and kale.

Make a veggie/egg frittata with eggs and greens and green garlic. Add sausage if meat eaters grumble. Grate some sharp cheese on top for oomph.

Radishes and cukes make a great Russian salad - slice thinly, toss with sour cream, salt and a whole lot of dill. 

Finally, whatever is simply too abundant to deal with, give away at a local church or food bank. They&#039;ll be happy for fresh food and it won&#039;t go to waste.

And you could make a fabulous pizza with sauteed kale, spring onions and garlic as toppings, spread a little olive oil on the pizza dough, and sprinkle some feta and cherry tomatoes on top and then bake.  Yummm...Swiss chard and sausage soup.  Man, I&#039;m hungry!</description>

We&#039;ve grown Collards and Chard easily, but when it comes time to harvest a green for dinner I always choose Kale.  Kale is especially good in the Fall/Winter when the cool weather sweetens it up.</description>

		<description>I love arugula in pasta, just thrown in during the last minute of cooking, served with olive oil and parmesan.  Today for lunch I made some brown rice spaghetti with kale (started that 1 or 2 minutes before putting in the pasta, it takes a bit to be tender)  diced ham, a little bit of cream cheese, garlic, parmesan, and a diced tomato.  That rocked.

I can&#039;t get anyone else in the house to eat greens, (except in a stir fry) I guess that means more for me.</description>
